Shirring
Use of shirred casings is an absolutely essential requirement for a modern meat-processing facility. Currently we are capable of shirring all casings with a diameter up to 200 mm. Depending on the diameter, the casing strand inside a shirred stick may be as long as 100 m. The use of such shirred sticks raises the equipment capacity and reduces the amount of casing waste in the production of sausages.
